What type of adhesive can I use to glue watch crystals?

Several common glues work very well on many forms of rigid plastic, including two-part epoxy and instant glue (cyanoacrylate). In addition there are two-part acrylic glues made only for gluing plastic, for example Super Glue Plastic Fusion and Loctite Epoxy Plastic Bonder, but neither are recommended for gluing polypropylene and polyethylene plastic.

An alternative is a two-part immediate glue, Loctite Plastics Bonding System, that's made to function with most all plastics, including polyethylene and polypropylene.

Age or some adhesives dry into a light yellowish colour, so make sure to really have a good fit between the pieces and wipe any surplus off. Hold the pieces set up until into the adhesive sets, or use clothes pins rubber bands, spring clamps, or modeling clay to hold the parts until the glue dries.
